She was a great cook in general and whenever we came to visit, she would feed us until we were about to pop. When my mom was young, she used to make everything in the enchiladas from scratch, from grinding the chili powder to preparing the fresh and soft tortillas.
Grandma's enchiladas were served at all family gatherings: holidays, birthdays, and every other get-together. Everyone in the family loved them, and to this day I have yet to taste a better enchilada.
I was told to keep this special recipe within the family, but I will tell you that black olives provide the perfect touch.
In the last few years, we have tried to carry on the tradition of making Grandma's enchiladas for special occasions. Every time we find ourselves in the kitchen, stirring the homemade sauce, rolling every last tortilla, and tasting that first bite, we think of our beautiful, loving, and strong-willed Grandma Peg.
I hope to pass this recipe on to my future family.

They look so yummy .... something I haven't made in a long while..think its time... I remember my grandma making piroshki, its a Russian meat pie that she baked in the oven with melted butter mixed with milk over the top..they were divine she also made them with fruit..I have never tasted anything like them..most people fry them my grandma never did..and My Mom doesn't know the recipe, I have tried to find it but can't...soon thinking im going to try from what mom remembers how to make the dough...I remember the meat..it was simple, cabbage and hamburger meat...its so nice to have special things from the passed...have a great week...with love Janice

I must admit I have never tried enchilada's before, it looks very delicious though.
It is always nice to keep family recipes/traditions going. I still make a lot of the recipes my Mother use to make us a child (some were from my grandmother).

Ahhhh... I was hoping for the recipe!
And yes... we made indian tacos with fresh home made fry bread, but my husband isn't a fan of carbs or salads, so I rarely make them anymore.

Oh my, these look delicious. I've cooked some Mexican recipes, and after watching a commercial earlier this week, I realized how I've never attempted to make enchiladas. Coincidence? It's meant to be!!

Black olives, oh how I could make a meal on them! Yummy enchiladas, we have them most often, being from Texas as we say "Tex-Mex" style. I have a lot of recipes, but I don't seem to do well with enchiladas, never have, maybe I need to make them more!!

I haven't eaten enchiladas so far, but it really looks good. We also have secret family recipes from my grandma, which we love very much. The one is a very delicious nut cake and the other one are her very special potato pancakes which you eat together with stewed apple. I can tell you - very delicious!

The enchiladas look so yummy. Right now, my frozen dinner is not sounding so good. I really wish I was a cook. I do ooh and ahhh over lots of beautiful pictures of food. Your post brought back memories of my grandmas cooking. As a kid it seemed like she was always in the kitchen cooking and there was always food on the table. Aren't grandmas great?
