Insalata Caprese

This Italian salad compliments a number of meals.  It can also be eaten as a snack or used as an appetizer for a fun party.  Insalata Caprese is so simple to make and is absolutely delicious!  


I picked up some tomatoes from my local farmer's market for the recipe.  It's amazing how much better produce tastes from farmers' markets as opposed to most grocery stores.  All you need for this recipe are sliced tomatoes, mozzarella, and basil leaves... and a glass of wine if you please ;-)

The salad is usually topped with olive oil and balsamic vinegar, but since I ran out, I splashed on a bit of Tuscan Italian dressing.  


Salt and pepper to taste and Enjoy!

I was just given the most remarkable Creole tomatoes fro Louisiana. Do you mind if I post about the tomatoes and link back to your recipe? I was wondering what kind of salad to make with them because they are special tomatoes. This recipe sounds perfect in its simplicity! :D Yummy!

You are the second blog I visit today with the word Tuscany in it. I dream of living in Italy some day, although I've never been, but I love everything Italian. I think I'll end my blogging visits on this positive note tonight and dream a little Tuscan dream of me in a sun hat carrying fresh bread and tomatoes in a basket as I pedal back home to my villa on my bright yellow bike. See what I mean? I've given this some thought. :)
